Ingredients
1 baguettewhite bread or rustic country bread
4 piècesripe tomatoes
2 goussesgarlic
1 bottefresh basil
50 mlextra virgin olive oil
5 gfine salt
2 gground black pepper
15 mlbalsamic vinegar
Instructions
1PREPARE THE TOMATOES: Wash your ripe tomatoes and remove the stems. Cut them in half, then gently scoop out the seeds with a small spoon to avoid excess moisture. Cut the flesh into small dice about 5mm and place in a bowl. This step is crucial to ensure the topping doesn't make your bread soggy.
2PREPARE THE GARLIC AND BASIL: Peel your garlic cloves and mince them very finely, almost to a powder. Chiffonade the fresh basil into thin ribbons just before use to preserve its aroma. Don't be shy with the basil—it's what will give your bruschetta its signature character.
3PREPARE THE TOPPING: In the bowl with the tomatoes, pour in the olive oil and balsamic vinegar, then add the finely minced garlic. Season generously with salt and pepper to taste. Stir gently and let rest at room temperature for at least 10 minutes so the flavors develop and the juices release slightly.
4PREPARE THE BREAD: Preheat your oven to 200°C or use an electric toaster. Cut your baguette into diagonal slices about 1cm thick. This diagonal cut increases the toasting surface and provides better visual presentation.
5TOAST THE BREAD: Arrange the slices on a baking sheet or directly on the oven rack. Toast them for 4 to 5 minutes until golden and crispy, with a beautiful amber color. Flip them halfway through to ensure even cooking on both sides. The bread should be crispy on the outside but not too hard.
6ASSEMBLE AND FINISH: Remove the bread from the oven and immediately rub each slice with a fresh half garlic clove. This hot step infuses the bread with flavor. Now fold the chiffonaded fresh basil into your tomato mixture. Generously top each slice of bread with the topping, leaving a border to hold. Serve immediately while the bread is still hot and crispy, otherwise it will soften. A drizzle of extra virgin olive oil as a final touch will enhance everything.
