Cut the largest fruits in half or quarters depending on their size, keeping the smallest strawberries whole for better presentation. Be careful not to crush the fruit with your hands.
2ARRANGE IN THE DISH: Place the prepared strawberries in a salad bowl or shallow serving dish. Work with care, alternating between cut and whole strawberries for an elegant final presentation. Do not pack the fruit tightly; leave them slightly spaced apart so the sugar can coat them evenly.
3GENEROUS SUGARING: Sprinkle the granulated sugar generously directly over the strawberries, making several passes to cover them well. Use approximately 40 g of sugar for 600 g of strawberries, adjusting to your personal taste. The sugar should form a light white layer over everything.
4TANGY FINISHING TOUCH: Drizzle the fresh lemon juice over the sugared strawberries. The lemon enhances the natural flavor of the strawberries and balances the sweetness of the sugar. Mix very gently using a wooden spoon, lifting the strawberries without breaking them to distribute the sugar and lemon evenly.
5REST AND SERVE: Let rest for at least 30 minutes at room temperature, or in the refrigerator if you prefer chilled strawberries. During this time, the sugar will gradually dissolve and create an exquisite syrup. Serve in individual bowls with some of the released juice, accompanied by crème fraîche or whipped cream if desired.
