If using cold rice straight from the refrigerator, gently break up the grains with your fingers to separate any clumped rice, which will ensure even stir-frying.
  2. 2COOK THE EGGS: Heat 1 tablespoon of oil over medium-high heat in a wok or large skillet. Pour in the beaten eggs and stir quickly with a spatula until just cooked but still slightly runny, about 1 to 2 minutes. Transfer the eggs to a plate.
  3. 3STIR-FRY THE VEGETABLES: Pour the remaining tablespoon of oil into the hot wok. Add the minced onion and garlic, letting them perfume for 30 seconds while stirring constantly to prevent burning.
