Ingredients

  • 2 pièces de 150gfresh cod fillets
  • 1 piècelemon
  • 15 gbutter
  • 2 piècescarrots
  • 1 piècezucchini
  • 1 pincéesalt
  • 1 pincéewhite pepper
  • 5 gfresh herbs (dill or parsley)

Instructions

  1. 1PREPARE THE VEGETABLES: Peel the carrots and cut them into thin batons approximately 5 cm in length. Wash the zucchini and cut it into batons of the same size. These uniform cuts ensure even cooking in 10-12 minutes. Set aside on a plate.
  2. 2FILL THE STEAMER: Pour approximately 500 ml of water into the bottom of the steamer. Bring to a boil over medium-high heat. Arrange the vegetable batons in the steamer basket, distributing them evenly so that steam circulates well around each piece.
  3. 3SEASON THE FISH: Place the cod fillets on a plate or small steamer-safe dish. Lightly salt and season with white pepper, which won't darken when steamed. Squeeze lemon over each fillet, dot with small pieces of butter, and sprinkle with finely chopped fresh herbs.
  4. 4COOK IN TWO STAGES: First place the vegetables in the basket for 5 minutes to give them a head start. Then gently add the plate with the fish and close the lid. Let cook for an additional 8 to 10 minutes, until the cod flesh flakes easily with a fork and becomes opaque.
  5. 5PLATE AND SERVE: Gently transfer the cod fillets to warm serving plates. Arrange the steamed vegetables all around. Pour the cooking liquid (concentrated in flavor) over the fish. Serve immediately with an extra squeeze of fresh lemon and a light drizzle of quality olive oil for finishing.
