Ingredients

  • 4 piècesred, yellow, and green bell peppers
  • 1 piècewhite onion
  • 2 goussesgarlic
  • 3 cuillères à soupeolive oil
  • 1 pincéesalt
  • 1 pincéeblack pepper
  • 1 cuillère à caféHerbes de Provence

Instructions

  1. 1PREPARE THE PEPPERS: Wash the peppers and dry them thoroughly. Cut them in half, gently remove the seeds and white membranes. Slice them into regular strips approximately 1 cm wide. This uniform cutting ensures even cooking and an elegant presentation.
  2. 2PREPARE THE AROMATICS: Thinly slice the white onion into half-moons. Peel and mince the garlic cloves finely. These ingredients will delicately perfume the skillet and create a flavorful base during cooking.
  3. 3HEAT THE SKILLET: Pour the olive oil into a large skillet over medium-high heat. Wait 1 minute for the oil to become hot and shimmer slightly, then add the onion and garlic. Sauté for 2 minutes, stirring regularly until the onion becomes translucent and the garlic flavors the oil without browning.
  4. 4ADD THE PEPPERS: Pour the pepper strips into the skillet. Increase the heat slightly to medium-high. Stir constantly with a spatula or wooden spoon for 10 to 12 minutes. The peppers should remain slightly crisp while becoming tender at the edges, with a few light caramelized spots.
  5. 5SEASON AND SERVE: Sprinkle with salt, black pepper, and Herbes de Provence. Stir well and taste to adjust seasoning if needed. Transfer the skillet contents to a warm serving dish. Serve immediately as an accompaniment to grilled meat, pasta, or as a topping for toasted bread.
