Instructions

  1. 1PREPARE THE BROCCOLI: Wash the broccoli under cold running water and pat it dry thoroughly with paper towels to remove all moisture, which will ensure beautiful browning during cooking. Cut the florets from the stem using a sharp knife. If any florets are too large, divide them in half for even cooking. Peel the stems and cut them into sticks approximately 5 cm long; they are delicious and prevent waste.
  2. 2PREPARE THE GARLIC: Peel the garlic cloves and crush them lightly with the flat side of your knife blade to release the aromas. Then slice them thinly or leave them whole depending on your preference. Set them aside to add at the end of cooking so they don't burn and retain a sweet, fragrant flavor.
  3. 3HEAT THE PAN: Pour the olive oil into a large skillet or wok and place over high heat. Wait about a minute for the oil to become hot and shimmering, but without smoking. Chef's tip: test the temperature by dropping a piece of broccoli into it; it should sizzle immediately at the surface.
  4. 4COOK THE BROCCOLI: Pour the florets and stem sticks into the pan. Sauté them while stirring regularly for 7 to 8 minutes. Look for a beautiful golden-brown coloration on the tips of the florets; this caramelization brings rich, slightly sweet flavor. The broccoli should remain crispy inside, not soft. If you prefer it more tender, cook for an additional 2 minutes.
  5. 5ADD THE GARLIC AND SEASONING: At the end of cooking, add the prepared garlic to the pan and stir quickly for 1 to 2 minutes to lightly flavor it without browning too much. Season generously with salt and pepper to taste. Add a splash of fresh lemon juice for brightness and freshness, then sprinkle with a pinch of Espelette pepper for a subtle heat.
  6. 6SERVE: Transfer the sautéed broccoli to a hot serving dish. Check the seasoning and adjust salt and pepper if necessary. Serve immediately while hot and crispy. It's excellent on its own, as a side dish for fish or meat, or as a light meal served with rice or fresh pasta.
