Instructions

  1. 1PREPARE THE BATTER: In a bowl, mix the flour, baking powder, sugar, and a pinch of salt. Create a well in the center and pour in the 2 lightly beaten eggs. Gradually incorporate the milk while stirring with a wooden spoon, working from the center toward the edges. The batter should be smooth but with some small lumps (do not overmix). Let rest 2-3 minutes while you heat the skillet.
  2. 2HEAT THE SKILLET: Melt a small knob of butter in a nonstick skillet over medium-high heat. When the butter foams and the skillet is very hot, you are ready to cook. The ideal temperature is verified by dropping a small amount of batter into the pan: it should sizzle lightly and cook in a few seconds.
  3. 3COOK THE PANCAKES: Pour approximately 80 ml of batter (about half a ladle) into the hot skillet to form a disk about 10 cm in diameter. Let cook 1-2 minutes without moving until the top is covered with small bubbles and the edges begin to pull away slightly. This signals that the inside has set.
  4. 4FLIP GENTLY: Using a thin spatula, lift the pancake with a quick motion and flip it with a sharp flick of the wrist. Cook 1 minute on the other side until you achieve a beautiful golden color. The pancake should be puffy and light.
  5. 5SERVE HOT: Place the cooked pancake on a warm plate. Repeat with the remaining batter, adding a little butter to the skillet between each batch. Serve immediately while hot, with maple syrup, honey, jam, or fresh fruit according to your preference.
