1PREPARE THE BATTER: In a bowl, mix the flour, baking powder, sugar, and a pinch of salt. Create a well in the center and pour in the 2 lightly beaten eggs. Gradually incorporate the milk while stirring with a wooden spoon, working from the center toward the edges. The batter should be smooth but with some small lumps (do not overmix). Let rest 2-3 minutes while you heat the skillet.
2HEAT THE SKILLET: Melt a small knob of butter in a nonstick skillet over medium-high heat. When the butter foams and the skillet is very hot, you are ready to cook. The ideal temperature is verified by dropping a small amount of batter into the pan: it should sizzle lightly and cook in a few seconds.
