1PREPARE THE BATTER: In a bowl, crack 2 eggs and whisk them with the sugar for 1 minute until they lighten slightly. Gradually pour in the milk while stirring constantly to avoid lumps. The batter should be homogeneous and fluid like water.
2ADD THE DRY INGREDIENTS: Sift the flour directly above the bowl while pouring gradually, then pour in the warm melted butter. Whisk vigorously for 2-3 minutes until you obtain a smooth batter without lumps. Add a pinch of salt to enhance the flavors. Let rest for 2 minutes at room temperature.
3HEAT THE CRÊPE PAN: Heat a non-stick skillet or crêpe maker over medium-high heat for 2 minutes. Test the temperature by dripping a drop of water: it should bead and evaporate immediately. Lightly butter the surface with a cloth dabbed in butter.
4POUR AND COOK THE BATTER: Pour a small ladle of batter (approximately 60-80 ml) into the center of the pan. Tilt and immediately rotate the pan in a circular motion to spread the batter thinly and evenly across the entire surface. You should obtain a very thin and translucent crêpe.
5FLIP THE CRÊPE: Cook for 30-40 seconds until the bottom is golden and lightly pearlescent. With a thin spatula, loosen the edges then flip the crêpe with a quick motion. Cook the other side for only 20-30 seconds, as it cooks more quickly. The crêpe should be elastic and lightly golden.
6SERVE THE CRÊPES: Transfer the cooked crêpes to a plate as you finish cooking each one. Enjoy them immediately with sugar, jam, Nutella, honey, or fresh fruit. You can also keep them warm by covering them with a clean cloth for a few minutes. This recipe makes approximately 12-15 crêpes.
