1PREPARE THE AROMATIC BASE: Thinly slice the onion and lightly crush the garlic cloves after peeling them. In a large saucepan, pour the olive oil and heat over medium heat for 1 minute. Add the onion and garlic, then cook for 2 to 3 minutes, stirring regularly, until the onion becomes translucent and releases its aromas.
2BUILD THE TOMATO SAUCE: Pour the canned peeled tomatoes with their juice into the saucepan. Stir in the Herbes de Provence, a pinch of salt, and pepper.
