Ingredients

  • 800 gpotatoes
  • 3 cuillères à soupeolive oil
  • 1 cuillère à caféfine salt
  • 1 cuillère à cafésweet paprika
  • 0.5 cuillère à caféblack pepper
  • 0.5 cuillère à cafégarlic powder

Instructions

  1. 1PREPARE THE POTATOES: Rinse the potatoes under cold running water and dry them thoroughly with a clean cloth. Cut them into regular batons approximately 8 millimeters thick. For even cooking, all batons should be the same size. Place them in a bowl of cold water for 15 minutes to remove excess starch, which will ensure crispier fries.
  2. 2DRY AND SEASON: Drain the fries in a colander and dry them meticulously with paper towels or a clean cloth. Moisture is the enemy of crispiness. In a bowl, pour the olive oil and add the seasonings: salt, paprika, pepper, and garlic powder. Add the fries to this mixture and toss vigorously with a spatula until each baton is well coated with oil and spices.
  3. 3PREPARE FOR COOKING: Preheat your oven to 220°C (setting 7-8). Meanwhile, line two baking sheets with parchment paper. Arrange the fries in a single even layer on the sheets without overlapping them. Regular spacing allows heat to circulate uniformly and ensures the fries cook evenly.
  4. 4FIRST COOKING PHASE: Place the sheets in the preheated oven and bake for 15 minutes. Halfway through cooking, shake the sheets or stir the fries with a spatula to ensure even cooking on all sides. The fries should begin to take on a pale golden color at this stage.
  5. 5FINISHING AND CRISPING: Increase the oven temperature to 240°C (setting 8) and continue cooking for 8 to 10 additional minutes until you achieve a beautiful uniform golden color. The fries should be crispy on the outside and tender on the inside. Remove the sheets from the oven and carefully transfer the fries to a serving dish.
  6. 6FINISHING AND SERVING: Taste and adjust the seasoning if necessary with a little salt. Serve immediately while the fries are still crispy. You can accompany them with homemade mayonnaise, ketchup, béarnaise sauce, or grated cheese according to your preferences. Oven-baked fries are best enjoyed within 10 minutes of coming out of the oven.
