Transfer the rinsed rice to a rice cooker, add 360ml of water, and cook according to the rice cooker's instructions, typically about 15-20 minutes. The rice should be tender but still have a slight firmness to it, perfect for molding.
2PREPARE THE RICE SEASONING: While the rice is cooking, combine 3 tablespoons of rice vinegar with 1 teaspoon of salt and 1 tablespoon of sugar in a small bowl, stirring until the salt and sugar dissolve completely. This creates the characteristic tangy, lightly sweet flavor that defines onigiri rice. Have the mixture ready near your work station for immediate use.
3SEASON THE COOKED RICE: Transfer the hot cooked rice to a large wooden or plastic bowl, preferably one that won't crack from the heat.
