Remove immediately and plunge into ice water to stop the cooking. Peel the skin easily starting from the score, then cut the tomatoes into quarters while removing the seeds. If using canned tomatoes, pour them into a bowl and lightly crush them with the back of a spoon for a pleasant chunky texture.
  2. 2SLICE THE ONIONS AND CRUSH THE GARLIC: Peel the onions, cut them in half, and mince them finely. Peel the garlic cloves and lightly crush them with the flat of your knife so they release their aroma, then chop them roughly. This preparation is crucial as it allows your aromatics to infuse well into the oil during cooking.
  3. 3HEAT THE OLIVE OIL: Pour the extra virgin olive oil into a large saucepan over medium heat. Wait until the oil is hot and shiny, about 2-3 minutes. You should smell the delicate aroma of the oil without it beginning to smoke. This step is important to establish a good flavor base for your sauce.
