Ingredients

  • 1 kgfresh mussels
  • 200 mldry white wine
  • 1 pièceonion
  • 30 gbutter
  • 10 gfresh parsley
  • 2 brinsfresh thyme
  • 1 feuillebay leaf
  • 1 pincéefreshly ground pepper
  • 1 pincéesalt

Instructions

  1. 1PREPARE AND SORT THE MUSSELS: Rinse the fresh mussels under cold water, scrubbing them vigorously with a damp cloth to remove sand residue and seaweed. Discard any mussels that are open and do not close when pressed, as well as those that are cracked or abnormally heavy. Drain them in a colander. This step is crucial for guaranteeing the quality of the final dish.
  2. 2PREPARE THE AROMATIC BROTH: Peel and thinly slice the onion into half-rings. In a large pot or Dutch oven, melt the butter over medium heat, then add the onion. Cook for 2-3 minutes without browning until it becomes translucent and releases its aromas. Pour in the dry white wine and let it reduce by half over 2 minutes to eliminate the alcohol and concentrate the flavors.
  3. 3ADD MUSSELS AND AROMATICS: Add the prepared mussels to the pot with the thyme, bay leaf, parsley (reserve some for finishing), and a turn of freshly ground pepper. Cover the pot with a lid and increase the heat to high. Cook for 5-7 minutes, stirring the pot once or twice during cooking so the mussels distribute evenly and cook uniformly.
  4. 4CHECK FOR DONENESS: The mussels are cooked when their shells open. Gradually pour them into a colander through a fine sieve to separate the mussels from their broth and eliminate sediment. Discard any mussels that have not opened after cooking. The clear and fragrant broth will accompany the dish.
  5. 5FINISHING AND SERVING: Gently pour the filtered broth over the mussels, leaving the sediment at the bottom of the pot. Sprinkle generously with fresh chopped parsley and a light turn of freshly ground pepper. Adjust the seasoning with salt if necessary. Serve immediately in shallow bowls with toasted bread to soak up the delicious broth.
