Ingredients

  • 3 pièceseggs
  • 250 mlmilk
  • 100 gflour
  • 75 ggranulated sugar
  • 300 gcherries or red berries
  • 30 gsoft butter
  • 1 pincéesalt
  • 15 gpowdered sugar

Instructions

  1. 1PREPARE THE FRUIT AND PAN: Rinse your cherries or red berries and gently pat them dry with paper towels. Generously butter a 25 cm round baking dish, making sure to coat the sides and bottom well to prevent the clafoutis from sticking during baking. Preheat your oven to 200°C using convection or conventional heat. Distribute the fruit evenly in the buttered pan.
  2. 2PREPARE THE BATTER: In a bowl, crack the three eggs and beat them vigorously with the granulated sugar for 2 minutes until the mixture becomes pale and foamy. This step incorporates air which will make the clafoutis light and airy. Gradually pour in the milk while continuing to mix to prevent lumps.
  3. 3INCORPORATE DRY INGREDIENTS: Sift the flour directly over the mixture along with a pinch of salt. Gently fold with a whisk using circular motions from bottom to top to incorporate the flour without overworking the batter. You should obtain a smooth and homogeneous batter, slightly thicker than liquid cream but still pourable.
  4. 4POUR AND BAKE: Gently pour the batter over the fruit, distributing it evenly. The mixture should cover the fruit about three-quarters of the way. Bake at 200°C for 18 to 22 minutes. The clafoutis is done when it is puffed and golden on top, with a slight jiggle in the center but not liquid. A knife inserted near the edge should come out clean.
  5. 5FINISHING AND SERVING: Remove the clafoutis from the oven and let it rest in the pan for 3 to 4 minutes to stabilize slightly. Dust generously with powdered sugar just before serving for an extra sweet and indulgent touch. Enjoy warm or at room temperature with a scoop of vanilla ice cream or a dollop of crème fraîche.
