1MELT THE CHOCOLATE: Break the dark chocolate into small pieces and place it in a bowl with the butter cut into dice. Melt over a double boiler, stirring regularly with a spatula, or in the microwave in 30-second intervals, mixing between each. The chocolate should be smooth and glossy, without lumps. Remove from heat and let cool slightly.
2PREPARE THE EGGS: Carefully separate the egg whites from the yolks using two different bowls. Make sure no trace of yolk mixes with the whites, as this would prevent them from whipping properly. The yolks should remain intact for incorporating into the chocolate.
3INCORPORATE THE YOLKS INTO THE CHOCOLATE: Pour the three egg yolks into the warm chocolate and mix vigorously with a whisk until you obtain a smooth and homogeneous cream. Add the sugar and cold water, then whisk for a few seconds so the mixture becomes airy and glossy. This preparation should be smooth as silk.
4WHIP THE WHITES TO STIFF PEAKS: Pour the three egg whites into a very clean bowl with no trace of grease. Whisk them vigorously using an electric mixer or by hand until they form firm and glossy peaks. Start slowly then increase the speed gradually for a light and airy texture.
5ASSEMBLE THE MOUSSE: Gently pour one-third of the whipped whites into the chocolate preparation and fold with a spatula using slow circular motions from bottom to top, without crushing the mousse. Then fold in the remaining whites the same way. The mousse should remain airy and light, with some white swirls still visible.
6PLATE AND SERVE: Pour the mousse into individual cups or glasses, filling three-quarters full. Smooth the surface lightly with the back of a spoon. Serve immediately or refrigerate for up to 30 minutes before enjoying. The mousse should be well chilled for optimal texture, ideally accompanied by dry biscuits or red berries.
