  1. 1PREPARE THE CRÊPES: Make 8 sweet crêpes according to the classic recipe and keep them warm. They should be well-golden and pliable to fold easily without tearing. Stack them gently on top of one another and cover with a clean kitchen towel to maintain the proper temperature.
  2. 2PREPARE THE RED BERRIES: Wash and hull the strawberries, then cut them in half or quarters depending on their size to obtain uniform pieces. Place the raspberries and blueberries in a fine strainer and rinse them gently under cold water without damaging them. Pour all the red berries into a clean bowl and generously pour honey over the fruit to flavor them.
  3. 3FLAVOR THE RED BERRIES: Add the fresh lemon juice to the red berries and gently mix with a wooden spoon without crushing the berries. Let rest for a few minutes at room temperature so the flavors develop and the fruit releases its natural juices. The lemon will enhance the fruity aromas and prevent oxidation of the red berries.
  4. 4PREPARE THE SWEETENED CRÈME FRAÎCHE: Pour the crème fraîche into a cold bowl and gradually add the sifted icing sugar.
