Ingredients
1 litrevegetable or chicken broth
250 grammespolenta (cornmeal)
50 grammesbutter
75 grammesgrated Parmesan cheese
100 millilitresheavy crème fraîche
1 pincéesalt
1 pincéewhite pepper
Instructions
1BRING THE BROTH TO A BOIL: Pour the broth into a medium-sized saucepan and bring it to a boil over medium-high heat. The broth should be at a rolling boil before adding the polenta to ensure even and consistent cooking. Adjust the salt at this point if necessary.
2SPRINKLE IN THE POLENTA: Lower the heat slightly and pour the polenta very gradually in a thin rain, stirring constantly with a whisk or wooden spoon. This technique prevents lumps from forming. Continue stirring without pause for 2-3 minutes until the polenta is completely incorporated.
3COOK WHILE STIRRING REGULARLY: Let simmer over low heat for approximately 10-12 minutes, stirring every 2 minutes to prevent sticking to the bottom. The polenta should thicken gradually and become smooth and creamy. You'll know it's ready when the spoon leaves a trace when lifted from the pot.
4FINISH WITH CREAM AND BUTTER: Remove from heat and incorporate the crème fraîche by pouring slowly while stirring well. Then add the cold butter in small pieces, which will melt in the residual heat and create a velvety texture. Stir vigorously to ensure everything is well combined.
5ADD CHEESE AND SEASON: Gradually add the grated Parmesan while stirring so it melts smoothly throughout. Taste and adjust the seasoning with a pinch of salt and white pepper. The polenta should be smooth, glossy, and melt slightly on the tongue.
6SERVE IMMEDIATELY: Pour the creamy polenta into preheated shallow bowls or onto a serving platter. It should flow slightly but hold its shape. Serve at once with a drizzle of olive oil, a touch of crème fraîche, or accompanied by mushrooms, truffles, or a sauce of your choice.
