Ingredients

  • 3 pièceseggs
  • 50 ggrated cheese (Emmental, Gruyère or Comté)
  • 20 gbutter
  • 1 pincéesalt
  • 1 pincéepepper

Instructions

  1. 1PREPARE THE EGGS: Crack the 3 eggs into a bowl and beat them vigorously with a fork for about 30 seconds, until you obtain a homogeneous and foamy mixture. Incorporate a pinch of salt and pepper. This step is essential to incorporate air and make the omelet light and airy.
  2. 2HEAT THE PAN: Place a 24 cm nonstick skillet over medium-high heat. Add the butter and let it melt completely by tilting the pan to coat it well. Wait for the butter to foam and turn golden brown, which takes about 1 minute. This step guarantees a golden and flavorful omelet.
  3. 3POUR THE EGGS: Pour the beaten eggs into the pan and let them cook without stirring for 20 to 30 seconds, until the bottom begins to set. You should see a light golden crust form on the bottom. Use a silicone spatula to gently scrape the edges, directing the raw eggs toward the center.
  4. 4FORM THE OMELET: Continue stirring gently with the spatula for 30 to 40 seconds, pushing the cooked portions toward the center and allowing the liquid portions to flow to the hot edges. The omelet should remain slightly creamy in the center to be tender. Stop stirring when it begins to set but remains slightly moist on the surface.
  5. 5ADD THE CHEESE: Generously sprinkle the grated cheese over half of the omelet, leaving the other half plain. Cook for an additional 10 to 15 seconds so the cheese begins to melt slightly without overcooking the omelet. The cheese should be flowing and incorporated into the omelet.
  6. 6FOLD AND SERVE: Remove the pan from heat. Using the spatula, gently fold the omelet in half by folding the plain half over the cheese-filled half. Slide it immediately onto a preheated plate. Serve without delay to enjoy the warmth and melting cheese. The omelet continues to cook for a few seconds after removing it from the pan.
