50 mlamber rum or Grand Marnier

1PREPARE THE BANANAS: Peel your bananas and cut them diagonally into pieces approximately 2 cm thick. Choose firm bananas that are yellow with a few small dark spots, as they will hold up well during cooking. Reserve them on a plate and pour fresh lemon juice directly over them to prevent them from browning in the air.
2MELT THE BUTTER: In a skillet or copper pan suitable for tableside service, melt the butter over medium-high heat on a warming stand in front of your guests if possible. The butter should foam slightly and take on a beautiful golden color, approximately 2 minutes. Gently pour the brown sugar into the butter and stir for a few seconds with a wooden spoon.
3COOK THE BANANAS: Arrange the banana pieces in this butter-sugar mixture, spacing them slightly apart. Cook them 2 to 3 minutes on each side until they become lightly golden and begin to caramelize. The bananas should remain firm and not fall apart. Sprinkle with a pinch of vanilla powder.
4FLAME WITH ALCOHOL: Pour the alcohol (rum or Grand Marnier) into the skillet, pouring slowly and away from your face. Use a long kitchen match or lighter to ignite the alcohol. The flames should be spectacular but controlled. Let it flame for approximately 1 minute while gently shaking the pan, allowing the alcohol to evaporate and the sugar to caramelize further.
5SERVE IMMEDIATELY: Once the flames have subsided (the alcohol is cooked), pour the flambéed bananas into hot plates or bowls with their generous caramelized sauce. Serve immediately, preferably accompanied by whipped cream, a scoop of vanilla ice cream, or a dollop of thick crème fraîche that will melt deliciously when it comes into contact with the heat.
