Apple Compote

Ingredients

  • 800 gapples
  • 30 gsugar
  • 100 mlwater
  • 1 cuillère à soupefresh lemon juice
  • 0.5 cuillère à caféground cinnamon
  • 0.5 cuillère à caféliquid vanilla

Instructions

  1. 1PREPARE THE APPLES: Rinse the apples under cold water and peel them carefully with a vegetable peeler. Cut them into quarters, remove the seeds and cores with a small sharp knife. Cut the flesh into small, uniform cubes approximately 2 cm on each side. This uniform size will ensure even cooking and a smooth compote.
  2. 2POUR INTO THE SAUCEPAN: Pour the water into a medium-sized heavy-bottomed saucepan, then immediately add the apple cubes and fresh lemon juice. The lemon prevents the apples from browning and adds a subtle acidity that enhances the natural flavor of the fruit. Mix well to distribute everything evenly.
  3. 3COOK COVERED: Bring to a boil over medium-high heat, then reduce to medium heat and cover the saucepan. Cook for 15 to 20 minutes, stirring occasionally with a wooden spoon. The apples should become very soft and disintegrate easily when pressed against the side of the pan. You will see the mixture gradually transform into a thick puree.
  4. 4ADD SUGAR AND FLAVORINGS: Remove from heat and add the sugar, cinnamon, and liquid vanilla. Stir vigorously with a wooden spoon until you achieve a smooth and homogeneous texture. If you prefer an even more fluid compote, add a little water. Taste and adjust the sugar according to your personal preference.
  5. 5FINISH AND COOL: Pour the hot compote into a clean bowl or directly into storage jars. You can pass it through a food mill or through a sieve if you prefer an ultra-smooth texture without lumps. Let it cool to room temperature for 15 minutes, then refrigerate for at least 2 hours before serving. The compote keeps for 5 days in the refrigerator.
