Ingredients
1 piècesandwich bread or baguette
100 gblack tapenade
150 gfresh cheese (goat cheese or ricotta)
150 gcherry tomatoes
2 cuillères à soupeolive oil
1 pincéeHerbes de Provence
1 pincéesalt and pepper
Instructions
1PREPARE THE BREAD: Cut the bread into 1 cm thick slices lengthwise, then cut them diagonally to obtain elegant rectangles. You can also use a baguette cut on the bias. Set the slices aside on a cutting board.
2TOAST THE BREAD: Preheat your oven to 200°C or use a toaster. Arrange the bread slices on a baking sheet or directly on the oven rack. Lightly brush both sides with olive oil using a pastry brush so they become golden and crispy. Toast for 6 to 8 minutes until they reach a nice golden color, flipping halfway through if necessary.
3PREPARE THE TOPPINGS: While the bread toasts, cut the cherry tomatoes in half or quarters depending on their size. Pour the fresh cheese into a bowl and season lightly with salt, pepper, and Herbes de Provence. Mix with a fork to obtain a smooth and creamy texture.
4ASSEMBLE THE TOASTS: Remove the toasts from the oven and let them cool for a few seconds. Spread a thin layer of black tapenade on each toast using a knife or small spatula. Then add a generous spoonful of the mixed fresh cheese, and finish with one or two pieces of cherry tomato distributed evenly.
5FINISHING TOUCHES AND SERVING: Arrange the toasts on a serving platter, creating an attractive composition. Give them a final brush of extra virgin olive oil and a pinch of fresh herbs if available (parsley, basil, or arugula). Serve immediately while the toasts are still warm and crispy for a delicious contrast between the heat and the fresh toppings.
